last weekend i had an enormous craving for apple mousse. so instead of buying one that is probably filled with sugar, i decided to make one myself. and to spice it up a bit, i made it into apple mousse crumble!
and here is the recipe!
– 4 apples
– 2 cinnamon sticks
– bourbon vanilla (optional)
– 2 tbsp honey
peel the apples, core them and cut them into halves. put them into boiling water with 2 cinnamon sticks and cook for 20 minutes. after 20 minutes, drain the apples, remove the cinnamon sticks and blend the apples with a hand-held blender. when you get a nice consistency, mix the honey, some ground bourbon vanilla and let it cool down.
– 100g almond flour
– 100g ground hazelnut
– 50g coconut sugar
– juice of one lemon
– 3 tbsp coconut oil
preheat the oven to 160C.
for the crumble, just mix all of the ingredients and knead it with your hands until it’s well mixed and starts to separate into crumbs. then spread the crumbs on baking paper and bake while regularly turning them over. bake for 10-15 minutes, then take the crumbs out of the oven and let cool. they may not seem crispy after taking out of the oven, but let them cool and they will get there ;)
when everything has cooled down, take a glass and put a layer of crumble in it, followed by a layer of apple mousse, followed by a layer of crumble…….
you can play with the presentation of the apple mousse crumble and put it into a normal glass, a bowl, souffle cups or even a wine or champagne glass!
and maybe leave for an hour or two before serving, the lower layers of crumble will soak up the apple mousse juice and become softer, while the upper layer remains crunchy!
