after a very long and stressful week i thought i could make something sweet to celebrate the beginning of a sunny weekend!
so, here’s a recipe for these beautiful blueberry-coconut cakes!
what you’ll need:
– 1 egg (or an egg substitute)
– 4 tbsp shredded coconut
– 2 tbsp coconut sugar
– 3 tbsp almond flour
– a bit of almond milk
– ground bourbon vanilla (or scrape the seeds out of a vanilla bean)
– 2-3 tsp of coconut oil
– 1-2 tsp baking powder (or the gluten-free one)
– as much blueberries as you like! (but don’t overdo it ;) )
preheat the oven to 180C. while the oven is heating up, mix the egg, sugar and oil with a hand-held mixer. when you get a nice paste-like consistency, mix all of the other ingredients in (except for the blueberries) with a spoon. add a bit of almond milk if it gets too crumbly. then, gently add the blueberries.
put the mixture into little glasses, a cake pan or whatever you would like to use and bake it for ca. 25 min.
