the summer is aaaalmost here!! and although vienna is rainy and quite cold for my liking, i wanted to create a real summer chocolatey treat! and keep it healthy as well ;)
so, here’s the recipe for these wonderful coconut-mint chocolates that are very refreshing and ooh so tasty.
100g shredded coconut (plus just a little bit more to sprinkle over the chocolates at the end)
2 tsp finely ground mint leaves (i used the lebepur one and i have to say, i’m so happy i found it! but you could make your own too!)
3 tbsp coconut oil
4 (middle sized) dates
100g couverture chocolate
mix the dry ingredients well (coconut and mint leaves powder). in a separate bowl mix the dates and a little bit of water with a hand held mixer until it becomes a thick paste. then mix the paste and the coconut oil with the dry ingredients. if it’s still hard to form the mixture, put a little bit more water in.
for this recipe i just used the simple dark couverture chocolate which you only have to melt over a pot of lightly steaming water.
form the mixture with your hands (this time i went for little cubes :) ) and then dip them into the melted chocolate! before the chocolate hardens, sprinkle it with some shredded coconut.
