when it gets cold and gloomy, the food i crave is all about pasta, rice, cheese and all those goodies. i should plan my workouts accordingly, but it’s so hard when you just want to be cuddled up in a blanket while eating some of the stuff mentioned above and watching a movie.
this recipe will definitely satisfy the cravings of that sort :)
what you’ll need:
– 2 handfuls of fresh basil leaves
– 90g grated goat’s cheese
– 100g pine nuts (or wallnuts)
– 1 1/2 glove of garlic
– olive oil
– salt and pepper
– 1 handful of cranberries
– 1 small zucchini
– pasta (i used the gluten-free one)
for the pesto, process the basil leaves, pine nuts and garlic in a food processor.
mix the goat’s cheese in and add olive oil until you’ve reached the desired consistency.
season to your liking.
for the pasta, cook it as instructed and in the last 5 minutes add a handful of cranberries. drain. in a pan, roast the zucchini, then add the cranberry pasta and pesto and toss it around for a bit, until everything is evenly mixed.
